Some days, I have time for a mug of tea while reading a short passage.  Then there are days when I’m out the door with a pink, stainless steel travel mug of tea.  On other occasions, morning tea is made in a 32-ounce teapot and covered with a humble tea cozy chosen from a variety of sources.  However, when company comes, the teapot is covered with whichever tea cozy strikes my fancy at the moment - but definitely something for “Puttin’ on the Ritz.”  On days when the workload seems nearly impossible, a cozy-covered teapot sits on the desk providing comforting cheer and encouragement.

Annelise:  We have been advertising in TeaTime magazine for years.  TeaTime readers are exactly our kind of tea drinker - they love tea and they love the tea experience - surrounded by beautiful tea accoutrements in a beautiful setting.  My tea room customers are the same; they appreciate that our tea cozies add to the ambiance of their shops.  I must explain, though, that Thistledown Cozies are not just about the tea experience - we are fanatical about how well our products function - as well as how good they look.

We are definitely of the digital age and use our website and emails to promote our wares.  This is occasionally an issue as some of our tea ladies are uncomfortable on the web - but most tea shop owners find it convenient to order directly from the website.  We still offer personalized service (and the chat) that comes with a phone call.

We are regulars at the World Tea Expo.  The Expo has been a fabulous forum for our cozies. The most exciting thing happening is the interest my college-aged children are showing in my business. Tea seems to have caught on with this generation. Well I got the zoji today, and already it changed my life I came home from work today and water was already to go just had to wait 3 minutes for the steep to be done.
Anyways I did some testing of the temps, and it seems like the 195 after being poured into my tea pot (0.7 liters) it cools right down to 180 according to my thermometer. The 175 cools it down too much to make green tea.
Does anyone know how much a month it costs to keep this thing going?

Also I don't miss my old stainless kettle that has been put in the cupboard of shame

Maybe first establishing what kind of tea on the island.

For music, ideally it'd be that kind of music which lends itself to be rediscovered (in parts) upon repeated listens. So that excludes pretty much all the 4/4 song material, even if the song is really spirited and good. Well, maybe not an extraordinary song.

So yes, jazz would be in there. Good heartfelt solos, intricate bvut sometimes evasive harmony and counterpoint touches.

Or maybe that music sometimes heard in dreams, which seems so wondeful.

I´ve been to Mexico twice...for just over a month total. I definitely agree the food in Mexico is very good. Everything there was so delicious! I think much better quality than what we eat in Canada and the United States and I often find myself wishing we had so many products from Mexico, including many of the fresh fruits and vegetables that are hard to find and expensive here.

I chose other because sometimes its real fast and sometimes real slow.

I'll just find myself in a slight daze staring at my teas...not really thinking much lol...just sitting there...eventually though something will jump out and say drink me

Other times I will already know what I want to drink but because I have to weigh and refill my drinking bag I skip that tea and move onto something not being stored , the daze sets in more when this happens and when I am dehydrated.

Bags open? 2 chinese green, 1 dancong, 3 japanese green, 5 taiwanese black, 5 taiwanese oolong, one yunnan black. Doing a good job not letting anything be open too long that shouldn't be. Most of greens and greener oolong are nearing the end.

today arrived my package from dragon tea house with some 2011 greens. I opened the superfine long jing. I went 4.3g in using cca 80ml water (gong fu?, semi gong fu?) it gave 6 nice steps. The flavour was nicely complex, the sweet green been taste was dominant, but also the nutty and higher floral notes were present. the first session made a quite good impression.

in the last 3 weeks I drunk mainly young shengs so this was really refreshing

Wah is located in Kangra valley, in Himachal Pradesh near Dharamshala, (the land of Dalai Lama.) This is one of the first spots where China tea was planted in India. The liquor has a medium ecru color, light pungency and interesting toasty finish. The aroma has a pleasant lemon note, which complements the delicate sweetness in the cup.

It normally takes me less than a few minutes to hone in one something and start brewing it. The only time it takes me longer is when I'm hunting down a sample I have written down, but it's somewhere buried in my pumidor...

My current priority is to finish off a lot of older tea (and samples) that have been piling up. In many ways, it's very neat to go back to some of the teas I tried when first really getting into tea...

OK so far I have tried:

Da Yu Ling....impressive first three brews, citrus-like taste but after that it was all basically gone. I will try on a modern zhuni I am waiting to receive just in case the pot used was the main culprit for the last four brews being so poor.

Fushoushan Lishan...very nice, 8 brews as of yet and I might squeeze two more after that. Consistent sweet floral taste; the aroma is very peculiar, kind of vanilla mixed with some sort of fruit but I couldn't really figure it out. Overall, a better tea than Da Yu Ling.

2011 Everyday Shi Feng Long Jing from Jing -

has a pine scent out of the bag...perhaps from just being pan fried. Flavor is nice with nutty overtones and grassy and floral undertones. Hard to beat this stuff for the price....though it did go up.

I have 4 teas open, not counting the pu'er samples that I'll probably not get back to for another year.

In the old days, Xi Hu Long Jing was classified into 13 grades, from Superior 1, Superior 2, Superior 3, Grade 1... to Grade 10. It was the official and universal way of grading when everything was state-owned, including tea business. Today it's still in the textbooks of tea institutes and used in research institutions. But most tea estates and tea companies are privately owned. Producers and owners can grade their tea the way they wish.

I've seen a lot of producers of various teas whose grade 2 teas are much better than superior grades of many other producers. So I think the grading doesn't tell you much about the tea itself, but tells a lot about the standards of a producer/supplier/vendor.

Also because of the messed-up grading standards, typically a lot of farmers of long jing, bi luo chun and other green teas use harvest dates to grade their tea - although it's not a perfectly scientific standards, it's probably more objective.

I use these Canopic Jars. The rotten organs of a pre-dynastic Egyptian priest lend the tea an interesting flavor. You can't really buy these nowadays...

Yes. I'm still debating what to brew in it. I did soak it in a very mellow shu puerh for the last couple of days, and rinsed with boiling water today.
